Ingredients:

Washed and cleaned natural mushrooms...........................................2 cups
Turmeric powder..................................................................................1/2 tsp
Red chilli powder................................................................................3 tbsp ( Adjust as per your taste)
Pepper..................................................................................................1/4 tsp ( Optional )
Shallots...............................................................................................10 nos
Mustard Seeds....................................................................................1/4 tsp ( Optional )
Curry leaves........................................................................................2 Sprigs
Coconut oil..........................................................................................For fry
Salt to taste.

Directions:

FRESH NATURAL
MUSHROOM

1. Mix mushrooms with turmeric powder, red chilli powder, salt and keep it aside.

2. Heat a pan with 2 tsp coconut oil and add mustard seeds, curry leaves, finely chopped shallots. stir well for a minute.

3. Add mushroom mix, stir it and put a lid and cook for 4 minutes in a medium flame. Let the water get dry.

4. Heat a pan with enough coconut oil , Add cooked mushroom and fry it for a 5 minutes. Put 1/4 tsp pepper just before finish the cooking ( Optional ). Now Kattukoon Roast/Natural Mushrooms Roast Kerala Style is ready.

TIPS:

* After washing and cleaning of mushrooms, they absorb water and it's enough for cooking so that no need of water while cooking.
* When picking natural mushrooms beware of poisonous.
* Instead of shallots you can use onions.
* If you like, You can add 1/2 tsp garam masala.
