Vermicelli Upma


Ingredients
2 cup vermicelli lightly roasted
One medium potato 
One medium tomato
2 green chillies.
1 tsp mustard seeds
1/4 cup roasted groundnuts

Wash the potatoes and tomatoes thoroughly and cut into cubes and keep aside. Boil enough water in a pan and let it come to boil then add vermicelli.once you see vermicelli turning transparent. Take them out and wash gently with cold water and spread it on a colander.

In a wok, add few drops of oil and then add mustard seeds let it splutter. Add potato cubes and cover the wok with a lid. When they are cooked add tomatoes and let them become little sift. Add vermicelli and fry for a second or two and then add nuts.

While making this dish you sometimes tends to over mix the vermicelli. Secret behind getting the right consistency or having it not too mashed up is to rinse the boiled vermicelli with cold water and spread it evenly and refrigerate till you make the mixture ready.
