Mutton biriyani


Ingredients

500 gms Mutton

21/2 cups basmati rice(u can also cook with normal rice)clean and drain the water half-an-hr before you start cooking

1 full coconut….extract 21/2 cups coconut milk and keep aside(cut the coconut into small pieces…..grind them adding 21/2 cups water and extract the milk using a sieve)

2 cups water

3-4tsp oil

3 tsp ghee

1 to 11/2 inch cinnamon stick(chekka)

6-8 cloves(lavangam)

5-6 cardamom(elaichi)

bay leaf

4-5 green chillies slit length wise

2 big onions chopped into bigger pieces

3tsp ginger-garlic paste(1tsp for biriyani,and 2tsp to be added when you boil mutton)

salt to taste

mint(pudina) leaves

coriander leaves

Method

Pressure cook the mutton adding some water,sufficient salt for mutton(approax..2tsp),2tsp ginger-garlic paste and pinch of turmeric for, 7-8 whistles….keep aside(dont waste the water)
In a pressure cooker add oil,ghee and once the ghee melts add cinnamom stick,cloves,cardamom,bay leaf ….after a minute add green chillies,chopped onions and fry till the onions turn brown….
Add boiled mutton without water and fry for 5mts…….now,add washed and drained rice and fry for 2mts(keep mixing or else the rice sticks to the cooker)…..now,add 21/2 cups coconut milk and mix well…….also add 2 cups water and mix well(if there is any water remaining after boiling mutton add that water instead of fresh water….for ex suppose you have 1glass boiled mutton water then,you require 1glass fresh water and 1 glass boiled water…..not confused right smile emoticon )
Now,mix well add suficient salt and add mint,coriander leaves and pressure cook for 2 whistles on sim flame…..thats it ….your yummy yummy mutton biriyani is ready …….
serve hot along with mutton gravy,onion raita,onion rings,lemon………
